Flat Iron Steak - Better than Filet?

Arguably the Flat Iron Steak is better than Filet Mignon. The tenderness of the Flat Iron is a very close second only to Filet, and the flavor the Flat Iron far exceeds Filet. This special cut was discovered by the Food Science Department at the University of Nebraska in Lincoln.

If you’ve never had a Flat Iron here is your chance this week at Wohlner’s. If you have had one, then this is your chance to get this reasonably priced steak at an even more reasonable sale price.

Porterhouse Steaks and Bananas

In my honest opinion, porterhouse are the best cut of steaks and there are only 2 per side of beef. In essence a Porterhouse is a very large T-Bone, the first two steaks on the short loin are Porterhouse and the rest are T-Bones. Both Porterhouse and T-Bone are two steaks—a filet mignon on one side of the bone and a NY Strip on the other side. Note that at the better steakhouses one Porterhouse serves two people.

Porterhouse and T-Bone steaks are very lean and should be cooked rare or medium rare. The trick is to get steaks thick enough that you can create a flavorful outside crust without over cooking the inside. The best cooking method is to first sear in a hot skillet then finish cooking in the indirect heat of a moderate oven. Incidently, there is some food science showing that the slower cooking in the oven tenderizes the steak.

When friends came in from out town we got together for a BBQ party.  So we stopped at Wohlner’s and grabbed a couple pork tenderloins, a bottle of Lawry’s Teriyaki Marinade with Pineapple, and some charcoal. 

Cooking the Perfect London Broil

The secrets to cooking the perfect London Broil are:  First, pick a thick London Broil from Wohlner’s.  Season your London Broil with plenty of coarse kosher salt and coarse pepper.  Grill each side for a few minutes directly over the coals or the high heat just long enough to get a seared crust on each side, then move the steak away from the coals and continue cooking more slowly with indirect heat.  If it's a thick London Broil you may need to turn this a few times while it cooks in the indirect heat. Cook until the internal temperature is 125°-128° for rare; 133°-135° for medium rare.  Rare is better with this cut!!  Do not overcook this very lean cut, sorry, I am repeating myself but I can’t stress this too much.  When it reaches the desired doneness, allow it to rest for 8 to 10 minutes, then slice very thinly across the grain. This combination of searing, followed by slower indirect cooking, resting, and then thinly slicing transforms a potentially tough cut into tender and flavorful sliced steak.  Finally, after slicing season the cut slices with more kosher salt and black pepper.

Roquefort is a sheeps milk cheese and aged in limestone caves in the south of France where they consider it the King of Cheeses.  It’s crumbly yet at room temperature it is creamy enough to be spreadable.  I love to spread it on slices of crusty Wohlner’s Baguette.  It also is the basis for good sauces for beef including tenderloin, Ribeye steak, strip steak, sirloin or sliced sirloin tip roast.  At Taxi’s restaurant they make a wonderful bleu cheese cream sauce they serve on sliced pork tenderloin which is a thing of beauty.

Saganaki? Grilled Kasseri Cheese? It’s all Greek to me!
OK, here’s the story on Saganaki. In Greece, Mt. Vikos Kaserri cheese is a Greek meze (a meze is what we call a warm appetizer) which is both pan-fried and served in a Saganaki pan (a small shallow pan, but you can use a skillet). Because fried Mt. Vikos Kasseri is traditionally served at the table in the traditional Saganaki pan the meze is called Saganaki. It is both delicious and simple to make.
In 1968 a Greek restaurant in Chicago poured Ouzo over the fried cheese, flamed the Ouzo liquor at tableside, and yelled “Opa!” Flaming Saganaki is now traditional in the U.S. but not in Greece.

If I’m going to be stuck in the house all day Sunday as the snow flies maybe I’ll attempt a version of the classic French Cassoulet.  To do a true French Cassoulet takes 2 or 3 days and uses ingredients, such as duck and goose, readily available to a French farm wife as opposed to a American city boy like me.  I sleuthed the internet for some easier Cassoulet recipes and here is what I found.
