If you REALLY want to celebrate the 4th of July then you want Wohlner’s Steaks!
Wohlner’s Porterhouse, T-bone, and NY Strip Steaks , as well Asparagus, are all on sale this week.
Great steaks like Wohlner’s Porterhouses, T-Bones and NY Strips only need to be seasoned with good salt, coarse kosher salt and /or sea salt, and coarsely ground black pepper. (Save the chimchurri stuff for the lesser grades and cuts of beef, please.) However, a secret of the premier steak houses is to top a perfectly cooked steak with a little butter or some compound butter. Since Imported Roquefort Blue Cheese is on sale we suggest a Roquefort compound butter. Just spoon a dollop on each steak after you remove it from the grill and while it rests.
Roquefort Compound Butter
1 stick of Roberts Butter, softened
2 oz. Imported Roquefort Blue Cheese
2 teaspoons of finely minced fresh parsley
¼ tsp of garlic powder (optional)
Salt and Pepper to taste
Use fork to mash the ingredients together until the Roquefort is well incorporated. Then chill the mixture for 20 minutes. Make a double batch of this because the Roquefort compound butter is wickedly delicious spread on pieces of Wohlner’s Baguette or Wohlner’s Sourdough.
Grilled Giant Shrimp and Grilled Fresh Scallops with Garlic Butter
What a great change of pace—delicious seafood. Grill each until done then baste with melted butter infused with chopped garlic. Note that scallops usually need to cook less than 1 minute per side.
You and your Smore Brownies, will be the hit of the party
S’mores have been a 4th of July tradition since I can remember. Here is a version of S’mores that you can take with you to the fireworks display or that party you were invited too. Almost as simple as making Betty Crocker Fudge Brownies from the box, because that is what you do.
Adapted from Betty Crocker
Betty Crocker Fudge Brownie mix
Eggs, Canola Oil, and water as directed on the package
2 cups miniature marshmallows
4 graham crackers, broken into small pieces
2 Hershey Milk Chocolate Bars, broken into small squares
1) Mix Betty Crocker Fudge Brownie mix with water, oil and eggs, and bake as directed on the box. When baked remove brownies from the oven.
2) Turn the oven to broil. Evenly scatter the mini marshmallows over the brownies, and place under the broiler until marshmallows begin to brown, about 1 minute.
3) Remove and place broken Hershey Bar and broken graham crackers over the marshmallows.
4) Return to broiler oven for about 20 seconds—just until the Hershey Bar begins to melt. Remove from the oven allow to cool. (Don’t forget to turn off the broiler, I only mention that because I sometimes forget.)
When cool cut into 2” squares and serve.
Tip: Before mixing, line the baking pan with foil and spray with PAM. This will allow you to easily remove the brownies form the pan and cut them. Or use a disposable 8”x8 foil pan sprayed with Pam or well greased with butter.
Tip 2: Be careful about placing a glass baking dish under a broiler. The broiler temperatures could break the glass dish (not likely because of the little time spent under the broiler, yet possibly.)
S’more Brownie Sundaes
Make a S’more Brownie Sundae with S’more Brownies, above, and Kemp’s Vanilla Ice Cream or Kemp’s Frozen Vanilla Yogurt. Maybe drizzle some Hershey’s Chocolate Syrup over the whole sundae. The more I think about this the better it sounds!
